Vinification
In stainless steel, with submerged cap, that is the set of solid parts brought to the top of the tank by the unfolding of the carbon dioxide is kept immersed in the fermenting must with a net fixed at the middle height of the tank, this in order to favor the sweet extraction of anthocyanins, polyphenols and tannins. Fermentation on indigenous yeasts, maturation in steel on its own lees.
